Preparing the manioc

For those who don't know this is a manioc root.

These are peeled.

This is quite a social event here in Zambia and everyone mugs in!

It is quite hard to peel so it can take a while!

Anita soaks the roots in drums for a few days. The roots are then laid out to dry in the sun for again a couple of days and then eventually pounded into flour. This is what is used to make the Nshima.
